We had these at my mom’s 60th birthday party and I honestly never had the chance to taste one. They were all quickly eaten up! I heard they were delicious so I will trust the opinions of the guests on this one. Again, this was a really easy recipe. Our goal for the party was to keep things as simple as possible since most of the baking would be happening right before the guests came and it all had to be kept a secret. (Shown below on left. This is what you need:
- 4 tomatoes, sliced
- ¼ cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- ¼ teaspoon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
This is how you make it:
- Preheat oven to 450.
- Place tomatoes on a baking sheet lined with parchment paper or waxed paper.
- Top each tomato with Parmesan, oregano, salt, and pepper.
- Drizzle with olive oil and bake until tomatoes are tender, about 15 minutes.
- Serve warm, not hot.
