Another brunch item from my mom’s 60th birthday party. To prep these beforehand to eliminate as much day-of work as possible, I made the dough and the filling and then that morning, my sister put them together to bake. Simple and delicious! And cute. Because everything mini is adorable.
This is what you need:
- 1¼ cup Bisquick
- ¼ cup margarine, softened
- 2 tablespoons boiling water
- ½ cup half & half
- 1 egg
- 2 tablespoons finely chopped green onions
- ¼ teaspoon salt
- ¼ teaspoon cayenne pepper
- ¼ cup finely chopped spinach
- ½ cup shredded swiss cheese
This is how you make it:
- Preheat oven to 375.
- Generously grease 24 mini muffin cups with cooking spray.
- In a small bowl, stir Bisquick mix and butter until blended. Add boiling water, stir vigorously until soft dough forms. Press rounded teaspoon of dough on bottom and sides of each muffin cup.
- In a small bowl, beat half & half and egg until well blended. Stir in onion, salt, cayenne pepper, and spinach.
- Spoon 1½ teaspoon egg mixture into each muffin cup. Sprinkle cheese over tops.
- Bake 20 minutes or until edges are golden brown and centers are set.
